With the App Store, you will be about a week behind. Normally, it shouldn't be too much of a problem.

Is It possible to quickly replace a version if a major bug slips through?

On the same note
I have always wondered if it would be practical to have two updates available. The latest version and the latest stable release. (partly rhetorical, just something to consider if you haven't already)

That's completely impossible with the Mac App Store. I can't skip the review process. But that review process should normally prevent a major bug to slip through.

Of course, it's impossible with the Mac App Store.

For the other versions, the current system is good enough => if there's a big problem, I release a new version as fast as I can, and most users don't even notice.
